These muffins are a hit with my whole family! They are so easy to make and healthy for breakfast, snacks, or dessert! They are a great way to add veggies and fruit to a yummy treat!
Prep time: 10 minutes Bake time: 22 minutes
Ingredients:
-1 1/4 white whole wheat flour or whole wheat pastry flour
-1/3 cup unsweetened cocoa powder
-1/4 teaspoon salt
-1 teaspoon baking soda
-1/3 cup pure maple syrup (can also use honey)
-2 tablespoons coconut oil (melted and cooled)
-1 teaspoon vanilla extract
-1/4 cup applesauce
-1 egg
-1 cup shredded zucchini
-1 banana (ripe) and mashed
-1/2 cup oat milk
-1/2 cup mini dark chocolate chips
Next Step:
-Preheat oven to 350 F and add liners to your muffin tin.
-Shred the zucchini (I use a grater and shred the zucchini on a dish towel and sprinkle with a pinch of salt. Set aside for 5-10 minutes and then squeeze out all of the excess water. This is a very important step.
-In a bowl combine and whisk all the dry ingredients. The flour, cocoa powder, baking soda, and salt.
-In another bowl using a hand or stand mixer, combine the coconut oil, maple syrup, vanilla, and egg.
-Add in the squeezed zucchini, banana, oat milk, and applesauce and continue to mix for 1 minute.
-Slowly add in the dry ingredients and mix until just combined. Don't over mix.
-Fold in the chocolate chips and leave a few remaining to sprinkle on top.
-Pour the batter into a lined muffin tin (fill 3/4 to the top) add a few chocolate chips on top.
-Bake for 22 minutes or until a toothpick inserted comes out clean.
-Let cool and ENJOY!!!
