Healthy Grain Bowl with a Spicy Ginger Soy Dressing!


This is one of my favorite grain bowls! I love to serve and eat this cold, but you can also enjoy it warm. It is healthy, flavorful, and guilt free! This dish is packed with nutrients, fiber, antioxidants, protein, minerals, and more!


Ingredients:

-Tricolor Quinoa

-Farro

-Red onion

-Edamame

-Avocado

-Jalapeno

-Black beans

-Corn

-Wonton Chips


Spicy Ginger Soy Dressing:

-1 tablespoon Sriracha

-2 tablespoons soy sauce

-1 tablespoon toasted sesame oil

-1 tablespoon honey

-1 tablespoon sesame seeds

-Pinch of ground ginger or 1/4 teaspoon fresh grated ginger

-1 tablespoon rice wine vinegar








Next Step:

-**I enjoy this dish cold, so I prepare everything the day before and then throughout the week I put it together for a delicious grain bowl for lunch or dinner. If you prefer to eat it hot, you can make it the day of.**

-Cook the farro.

-Cook the quinoa.

-Heat up the beans and corn for 3-5 minutes and drain.

-Boil the edamame for 5 minutes and drain.

-Slice the red onion, avocado, and jalapeño.

-To make the dressing, add the sriracha, soy sauce, toasted sesame oil, honey, sesame seeds, ginger, and rice wine vinegar to a glass jar. Cover and shake for 1 minute. (If you are making for multiple people you can double/triple this recipe.)

-Put together your grain bowl by adding the quinoa, farro, beans, corn, edamame, sliced avocado, onion, and wonton chips.

-Drizzle the dressing all over the grain bowl.

-Serve and ENJOY!!!
