Healthy Carrot Cake Breakfast Bars!!

If you want to spoil your family with a delicious breakfast, then make these amazing carrot cake breakfast bars! They are so delicious and healthy! Your family will think they are eating a treat for breakfast, yet these "cakes" are packed with oats, pecans, carrots, and white whole wheat flour. The glaze on top brings all the flavors together. This is definitely one of my go to breakfast/brunch bars.


Prep time: 8 minutes Cook time: 20 Reset time: 1 hour

Ingredients:

-1 cup white whole wheat flour

-1 cup quick cooking oats

-1 teaspoon cinnamon

-1 teaspoon baking powder

-1/4 teaspoon ground ginger

-1/8 teaspoon ground nutmeg

-1/2 teaspoon salt

-1 1/2 cups grated carrots

-1/2 cup pure maple syrup

-1/2 cup coconut oil (melted)

-1 egg

-1/2 cup chopped pecans

Glaze:

-1/2 cup powdered sugar

-1 tablespoon butter (softened)

-1/2 teaspoon vanilla extract

-2 to 3 teaspoons of oat milk (any milk will work)

-pinch of salt

Next Step:

-Preheat oven to 375 F and add parchment paper to an 8x8 baking dish.

-In a small bowl add the maple syrup and egg. Mix with a spoon to combine.

-Add the coconut oil and carrots. Mix and set aside.

-In another bowl add the oats, flour, cinnamon, baking powder, ginger, nutmeg, pecans and salt. Mix with a spoon to combine.

-Pour the wet ingredients into the oat mixture and mix with a spoon until combined.

-Pour the batter into your baking dish.

-Bake for 20 minutes.

-Take out and let rest for 1 hour to settle and cool.

-While cooling make the icing. (combine everything with a mixer until you have a creamy icing/glaze.

-Pour the glaze into a plastic baggie and clip the end.

-Once cooled take out of the pan and slice into bars.

-Drizzle the icing all over the bars.
