Greek Arugula Salad with Crispy Roasted Chickpeas!!

This salad is EVERYTHING! Tasty, healthy, and delicious! This salad is bursting with tons of fresh vegetables, roasted chickpeas, and feta. It is packed with Vitamin C, calcium, nutrients, protein, antioxidants, and great for your overall gut health.


Ingredients:

Roasted Chickpeas:

-1/2 cup organic chickpeas

-1/2 tablespoon extra virgin olive oil

-1/8 teaspoon garlic powder

-1/2 teaspoon spanish smoked paprika

-1/8 red pepper flakes

-Pinch of salt and pepper

Salad:

-2 cups arugula

-2 tablespoons roasted bell peppers

-1 tablespoon sliced pepperoncini

-1/4 cup cucumber (chopped)

-2 tablespoons red onion (sliced)

-Handful of cherry tomatoes (sliced)

-1 1/2 tablespoons crumbled feta

Dressing:

-1 Tablespoon extra virgin olive oil

-1 Tablespoon red wine vinegar

-1 1/2 tablespoons fresh lemon juice

-1 teaspoon honey

-1 clove garlic (chopped)

-1/2 teaspoon dried oregano

-Pinch of salt and pepper

Next Step:

-Preheat oven to 400F and line a baking sheet with parchment paper.

-Wash and drain the chickpeas.

-Toss the chickpeas in olive oil, paprika, garlic powder, red pepper flakes, salt, and pepper.

-Place the chickpeas on the baking sheet and roast for 25 minutes.

-Take out and let cool. (They will continue to crisp up while cooling)

-Make the salad dressing: Combine the olive oil, red wine vinegar, lemon juice, honey, garlic, oregano, salt and pepper. Stir to combine and set aside.

-To make the salad, combine the arugula, bell peppers, pepperoncini, cucumber, red onion, tomatoes, feta, and 1/4 cup of roasted chickpeas.

-Pour the dressing on top and toss the salad.

-Add the salad to your bowl and add the remaining chickpeas on top and a sprinkle of feta.

-Serve and ENJOY!!
