Granola Fruit Tart with Whipped Cream!
If you are looking for a healthy option for July 4th, than try this amazing granola fruit tart with homemade fresh whipped cream!! The granola tart is crunchy and is packed with oats and pecans! You can add any fruit you like on top, I love using fresh strawberries and blueberries. This healthy dessert is full of protein, healthy fats, fiber, calcium, potassium, antioxidants, folic acid, and vitamin C!
-2 cups Quick Cooking Rolled Oats (you can also substitute Gluten Free Oats)
-1/2 cup brown sugar
-1/2 cup chopped pecans
-2 teaspoons ground cinnamon
-4 tablespoons of salted melted butter
-1 1/2 tablespoons of pure maple syrup
-1 tablespoon of raw honey
-2 cups of heavy whipping cream
-4 tablespoons of powdered sugar
-1 teaspoon vanilla extract
-Preheat your oven to 350 F and set aside a 9 inch tart pan with a removable bottom.
-Combine your oats, brown sugar, pecans, cinnamon, melted butter, maple syrup, and honey in a bowl and mix with a spoon.
-Pour the mixture into the tart pan and firmly press down to form an even layer.
-Bake for 15-17 minutes. (until the edges turn a golden brown)
-Take out of the oven and let cool completely.
-Put a large bowl in the freezer to prepare to make your whipped cream.
-Once cooled, remove the bottom of the tart pan-leaving the granola tart on top. Set aside on a cutting board.
-Make your whipped cream. Take your bowl out of the freezer and add in the heavy whipping cream, powdered sugar, and vanilla extract.
-Mix with a hand or stand mixer for 5 minutes, or until you get high peaks on your whipped cream.
-Put together your tart!
-Spread the whipped cream all over the granola tart and smooth out with a knife.
-Then place your strawberries and blueberries in any pattern you would like.
-Serve and ENJOY!!!
