St. Patrick's Day is right around the corner!! I always love to serve these Gluten Free Mint Chocolate Chip Cookies! They are bursting with flavor, crisp on the outside, chewy in the middle, and packed with dark chocolate chips. If you are a fan of mint chocolate chip ice cream, then you must try these cookies!!!
Ingredients:
-1/2 cup salted butter (room temperature)
-1/2 cup of granulated sugar
-1/4 cup dark brown sugar
-1 1/2 cups of gluten free flour
-1 egg and 1 yolk
-1 tablespoon applesauce
-1/2 teaspoon baking soda
-Pinch salt
-1/2 teaspoon cream of tartar
-1/2 teaspoon peppermint extract
-Green food coloring (There is no exact measurement for this. Slowly add the food coloring until while you are mixing until it reaches the shade of green you like! Remember to go a little darker as it will lighten during baking)
-1 cup dark chocolate chips
Next Step:
-In a small bowl add the flour, salt, baking soda, and cream of tartar. Mix with a spoon and set aside.
-In a large bowl using a hand or stand mixer combine the butter and sugars.
-Then add in the apple sauce, egg, egg yolk and mix.
-Then add in the peppermint extract and the food coloring. Mix until combined.
-Add the flour mixture to the wet ingredients and mix until the dough forms.
-Pour in the chocolate chips and mix with a spoon.
-Refrigerate for 1 hour.
-Preheat the oven to 350 F and line a large baking sheet with parchment paper.
-Form into balls and put on the baking sheet. For the recored I love big cookies, so I usually need to bake my cookies for 13 minutes. If you are making small cookies, they can be done as soon as 9 minutes. You will know they are done when the edges turn a nice golden color.
-Let cool on the baking sheet or a baking rack for 10 minutes.
-Serve and ENJOY!!!
