Gluten Free Chocolate Chip Cookies!


Is there anything better then a warm chocolate chip cookie right out of the oven?!? You would never know these cookies are gluten free! They are so delicious and perfectly crisp on the outside and soft and chewy in the middle.


Ingredients:

-6 tablespoons of salted butter (softened)

-2 tablespoons of plain greek yogurt

-1/2 cup dark brown sugar

-1/4 cup granulated sugar

-3/4 teaspoon vanilla extract

-1 egg yolk

-1 cup & 2 tablespoons gluten free flour

-1/2 teaspoon baking soda

-1/4 teaspoon xanthan gum

-1/4 teaspoon salt

-1 cup dark chocolate chips

Next Step:

-Preheat oven to 375 F and line a large baking sheet with parchment paper.

-In a large microwave safe glass bowl melt the butter.

-Then add in the yogurt, brown sugar, and granulated sugar.

-Using a hand or a stand mixer, mix until blended.

-Next add in the egg yolk and the vanilla extract. Mix and set aside.

-In a separate bowl add in the gluten free flour, baking soda, xanthan gum, and salt. Whisk to combine.

-Add the flour mixture into the wet ingredients and mix until just combined.

-Fold in the chocolate chips.

-Using a #20 cookie scoop, add the cookie dough to the baking sheet. *(If you don't have a #20 cookie scoop then measure out 3 tablespoons of cookie dough and form into a ball.)

-Bake for 11 minutes.

-Take out and let cool for a few minutes.

-Serve and ENJOY!!!

*If your gluten free flour has xanthan gum or guar gum already in the ingredients then you can omit the 1/4 teaspoon of xanthan gum from the recipe.
