I make focaccia bread for 2 reasons. One is that it is so delicious!!! The second is that it makes your house smell unbelievably good! This bread is incredibly easy to make, and only needs a little over an hour to rise. It is soft on the inside and bursting with flavors of fresh garlic, rosemary, and thyme. I love to slice it up and serve with a side of flavored olive oils to dip in.
Prep time: 10 minutes Rest time: 90 minutes Cook time: 15 minutes
Ingredients:
-1/2 cup olive oil
-3 garlic cloves (chopped)
-1/2 teaspoon ground pepper
-1 heaping tablespoon fresh rosemary (chopped)
-1 heaping tablespoon fresh thyme (chopped)
-1 packet active dry yeast (2 1/4 teaspoons)
-2 1/2 cups all purpose flour
-1 cup warm water
-1/2 teaspoon honey
-1/2 sea salt
Next Step:
-Chop up the rosemary, thyme, and garlic. Set aside.
-In a medium size bowl add the yeast, water, and honey. Stir and set aside.
-On the stovetop add the olive oil, garlic, rosemary, thyme, pepper, and a sprinkle of salt. Heat on low and stir for 3-5 minutes. (Make sure the garlic does not burn.) Then set aside.
-Add 1/4 cup of the olive oil/herb mixture to the water/yeast mixture. Stir.
-Add the flour and stir until your dough starts to form.
-Take out and put on a lightly floured surface. Knead for a few minutes and form into a ball.
-Lightly grease a large bowl and put your dough in to rest/rise for 1 hour and 15 minutes.
-On a 8x12 rimmed baking sheet, add 2 tablespoons of the olive oil/herb mixture. Drizzle all over the baking sheet.
-Take out your dough and gently roll into a 8x12 rectangle. Place the dough in the baking sheet.
-Gently press down all over the dough-using your fingers to dimple the dough.
-Then pour the remaining olive oil/herb mixture on top of the dough.
-Let the dough rest for 20-25 minutes.
-Preheat the oven to 450 F.
-Bake for 15 minutes.
-Take out, slice, and serve!
