Is there anything better then fresh homemade red pepper hummus!?! I always have homemade hummus in my refrigerator. I add it to sandwiches, and my kids love to dip fresh veggies and pretzels into their hummus. Chickpeas are packed with nutrients, vitamins, fiber, and protein. It is a delicious and healthy snack and will be a big hit when served at parties and gatherings! Enjoy! xo
Prep time: 10 minutes Blend time: 1-2 minutes Cool in refrigerator: 30 minutes
Ingredients:
-1 jar organic chick peas
-1 jar organic red peppers (fire roasted)
-1/4 cup tahini
-2 tablespoons fresh squeezed lemon juice
-1 1/2 garlic cloves
-1 teaspoon cumin
-2 tablespoons olive oil
-Pinch of salt
-Pinch of pepper
-Pinch of cayenne pepper
-Garnish with a sprinkle of paprika, a drizzle of olive oil, and a few chopped red peppers
Next Step:
-Drain and rinse the chick peas.
-Take the skin off of the chick peas. (This is a bit time consuming, but gives your hummus a smooth and creamy texture)
-In a food processor or blender add the chick peas, 2 fire roasted red peppers (or 3/4 cup of chopped fire roasted red peppers), tahini, lemon juice, garlic cloves, cumin, olive oil, salt, pepper, and cayenne pepper.
-Blend on high until you have a thick creamy hummus.
-Refrigerate for 30 minutes.
-Take out and pour into a bowl.
-Garnish with a drizzle of olive oil, a sprinkle of paprika, and a few chopped red peppers on top.
-Serve with fresh veggies and pita bread.
