Farro Arugula Salad!!
I hope you try this amazing farro arugula salad! It has a ton of flavor, texture, and is so tasty! It is packed with fiber, protein, and healthy antioxidants. This salad is so easy to put together, will keep you full, and is delicious!
-1 cup of farro
-2 cups and 3 tablespoons of chicken or vegetable broth
-1 bay leaf
-Baby Arugula (2-3 cups- or as much/little as your want)
-3 tablespoons grated parmesan
-1/4 of a small sliced red onion
-1/4 Avocado (cubed)
-1/2 Granny Smith apple sliced
-2 tablespoons pecans, cashews, or almonds
-2 tablespoons dried cranberries
-2 tablespoons fresh squeezed lemon juice
-2 teaspoons olive oil
-1 teaspoon apple cider vinegar
-1 teaspoon raw honey
-1 teaspoon dijon mustard
-Pinch of salt
-Pinch of pepper
-Pinch of oregano
-Pinch of basil
-Pinch of red pepper flakes
-1 clove of garlic
-Cook your farro. On the stove top add the farro, broth, and bay leaf. Bring to a light boil and then cover and simmer for 25-28 minutes. Make sure to stir it a few times while cooking.
-When done put the farro in the refrigerator to cool.
-Make the dressing. Add the lemon juice, olive oil, apple cider vinegar, honey, mustard, salt, pepper, oregano, basil, red pepper flakes, and garlic. Mix and set aside.
-Put your salad together.
-In a large bowl add the arugula, a large scoop of farro, avocado, apples, nuts, onions, and cranberries. Toss to mix.
-Add the salad dressing and toss.
-Sprinkle the parmesan on top and serve.
