Edible Cookie Dough Bites!


Is there anything better than cookie dough right out of the bowl!?! It brings back so many memories of baking with my mother when I was a little girl. This homemade version tastes just like I remember!! (and doesn't have the raw egg or raw flour) It is so delicious and really easy to make. My kids love sprinkling it on top of their ice cream. You can use it as a dip with fruit, filling for cupcakes (after the cupcakes have baked), or you can make cookie dough truffles with a chocolate drizzle! There are so many possibilities and perfect to serve your loved ones for Valentine's Day!


Ingredients:

-1 1/4 cup quick rolled oats

-1/2 cup salted butter (room temperature)

-1/2 cup dark brown sugar

-3 tablespoons granulated sugar

-2 tablespoons oat milk

-1 teaspoon vanilla extract

-2/3 cup mini dark chocolate chips

Next Step:

-Add the rolled oats to your blender and blend on high until it is the texture of flour. Set aside.

-In a large bowl add the butter, brown sugar, and granulated sugar. Using a hand mixer, mix until blended.

-Add in the oat milk and vanilla extract. Continue to mix until blended.

-Add the oat flour and mix until blended.

-Fold in the dark chocolate chips.

-Refrigerate for 1 hour.

-Eat right from the bowl or you can shape them into balls and drizzle melted chocolate all over. (Be sure to refrigerate them after you drizzle the chocolate on top so the chocolate will set)

-Serve and ENJOY!!

**Do not bake this recipe into cookies**

**Do not substitute all purpose flour as it can not be eaten raw**
