Start your day off with this delicious mini Double Chocolate Banana Bread!! It is the perfect size to enjoy with your morning cup of coffee. My family enjoys them for breakfast, brunch, a snack during or after school, and of course dessert! This recipe will make 12 mini loaves and they freeze really well!

-3 ripe bananas

-1/2 cup salted butter (softened)

-1/2 cup light brown sugar (packed)

-1/2 cup granulated sugar

-2 eggs

-1/2 teaspoon vanilla extract

-1 3/4 cups all purpose flour

-1/4 cup unsweetened cocoa powder

-1 teaspoon baking powder

-1 teaspoon baking soda

-1/4 dark chocolate chips (melted)

-1 cup dark chocolate chips

Next Step:

-Preheat oven to 350 F and lightly butter a mini loaf pan. This recipe will yield 12 mini loaves.

-In a small bowl add the flour, baking powder, baking soda, and salt. Mix with a spoon and set aside.

-In another bowl mash up the bananas with a fork.

-Add in the butter, sugar, and light brown sugar.

-With a hand or stand mixer, mix until combined.

-Add in the eggs and vanilla extract and continue to mix.

-Slowly pour in the flour mixture and mix until combined.

-Melt the dark chocolate chips in a microwave safe glass bowl making sure to stir every 25 seconds so the chocolate doesn't burn.

-Add the melted chocolate to the batter and mix.

-Fold in the chocolate chips.

-Bake for 17-18 minutes. Be sure to check with a toothpick to make sure it is cooked through.

-Once cooled you can lightly sprinkle with powdered sugar. (optional)

-Serve and ENJOY!
