Cucumber Vegetable Wrap!


Looking for a healthy and tasty lunch idea!?! Then try this delicious Cucumber Vegetable Wrap! This healthy "sandwich" is bursting with all of your favorite vegetables and is packed with a ton of nutrients, vitamins, antioxidants, potassium, fiber, calcium and more! The cucumber lattice (aka "bread") is easy to put together and holds all of the veggies perfectly! I hope you love it as much as I do!


Ingredients:

-1 seedless cucumber

-Mediterranean hummus (or any hummus you prefer)

-Arugula

-Red onion

-Avocado

-Tomatoes

-Pepperoncini's

-Tortilla strips (optional- I love it for the crunch)

-Cholula hot sauce

-Salt and Pepper

Next Step:

-Wash and dry the cucumber.

-Using a peeler, peel long strips of the cucumber starting from the top all the way to the bottom. Repeat this step 15 times. Use the best 10 cucumber slices. Gently pat them dry with a paper towel.

-Line 5 cucumber slices vertically in a row. (Close together)

-Then for the remaining 5 slices weave them in and out horizontally until you have a lattice of cucumber slices!

-Once completed, gently move all of the slices close together.

-Then add any and all of the vegetables you love!

-I love to add a layer of hummus, arugula, tomatoes, pepperoncini's, avocado, red onion, and some tortilla strips (for a little crunch!)

-Add a sprinkle of salt and pepper and your favorite hot sauce!

-Gently roll up your "sandwich" and ENJOY!!
