Crispy Baked Seasoned Potatoes!

Writer's picture: Jessica LaritJessica Larit

These potatoes are the perfect side dish or appetizer to compliment any meal! They are baked, crispy, and perfectly seasoned in garlic, parmesan, herbs, and butter. They are SO delicious! You may want to double the recipe if you are serving more than 3 people. Enjoy!

Ingredients:

-1 large Russet Potato

-1/4 cup salted butter (melted)

-2 heaping tablespoons grated parmesan

-1 heaping tablespoon fresh parsley (chopped)

-1/4 teaspoon red pepper flakes

-1/4 teaspoon ground black pepper

-1/4 teaspoon oregano

-4 cloves of garlic (chopped)

-Course sea salt

Next Step:

-Preheat the oven to 400 F and line a baking tray with parchment paper.

-You can choose to peal the potato or not. I like to peel the front and back of the potato and leave the rest of the skin on the sides.

-Slice the potato horizontally a little bigger than 1/4 of an inch thick.

-Then add thin slices into your sliced potato vertically and horizontally without cutting through the potato. This will create a much crispier outcome!

-In a small microwave save bowl melt the butter.

-Add in the parmesan, parsley, red pepper flakes, black pepper, garlic, and oregano. Mix with a spoon to combine. (Don't add the salt until they are done baking)

-Take each potato and dunk it into the butter mixture and then lay it on your baking sheet.

-Repeat for each one.

-Bake for 20 minutes.

-Take out the baking sheet and flip the potatoes. Brush the remaining butter/herb mixture over the potatoes.

-Bake for another 20 minutes.

-Prepare your dunking sauce. I like to mix sour cream with chives, pepper, salt, and a sprinkle of garlic powder. These potatoes are also excellent with ketchup!

-Take out and sprinkle with corse sea salt.

-Serve immediately!
