Cookie Baked Oatmeal!


I think this might be one of my favorite oat bakes yet! This easy to make, healthy, and delicious cookie baked oatmeal is SO good! It is packed with fiber, protein, vitamins, nutrients, antioxidants, potassium, and more! I love to have this for breakfast and it keeps me satisfied, energized, and full throughout my morning.


Ingredients:

-1/2 cup of quick rolled oats

-1/2 ripe banana

-1 tablespoon of honey

-1/4 teaspoon baking powder

-1/2 teaspoon ground flax seed.

-2 tablespoons oat milk

-1 egg

-Mini dark chocolate chips

-1 tablespoon of peanut butter

-1 6oz ramekin (Click to check out my favorite ramekins!)

Next Step:

-Preheat oven to 350 F and take out a 6 oz ramekin.

-In your blender add the oats, banana, honey, baking powder, flax seed, oat milk, and egg.

-Blend until the mixture is smooth.

-Pour half of the batter into the ramekin and then sprinkle with a few chocolate chips.

-Pour the remaining batter on top and then sprinkle with chocolate chips.

-Bake for 25 minutes.

-In a microwave safe glass bowl melt the peanut butter.

-Drizzle the peanut butter on top.

-Serve and ENJOY!!!!
