Coconut Granola Bark!


If you are looking for a quick and healthy snack, then try this amazing coconut granola bark! It is a healthy, crunchy, and a delicious sweet treat. I think it is the BEST snack and I love that you can serve it at parties or grab it on the go for a protein and fiber packed snack!


Ingredients:

-2 cups quick rolled oats

-2 tablespoons peanut butter

-2 tablespoons raw honey

-1 teaspoon pure maple syrup

-2 tablespoons coconut oil (melted)

-1 egg white

-1 bag dark chocolate chips (around 9-10 oz)

-2 1/2 tablespoons shredded unsweetened coconut.


Next Step:

-Preheat the oven to 325 F and line a 10x8 baking dish with parchment paper.

-In a small microwave safe bowl add the peanut butter, honey, maple syrup, and coconut oil. Microwave for 30-45 seconds and then mix until all combined.

-In a large bowl add the rolled oats, and the warm peanut butter mixture. Mix until combined.

-Then add in the egg white and mix.

-Pour the mixture on your baking sheet and spread out evenly.

-Bake for 23 minutes.

-Take out and let cool completely.

-Once cooled melt the dark chocolate chips in the microwave. Be sure to stir every 25 seconds so the chocolate doesn't burn.

-Pour 3/4 of the chocolate all over the toasted granola. Spread out to form an even layer. If you need more, use the remaining melted chocolate.

-Sprinkle the shredded coconut on top.

-You can also add a sprinkle of sea salt if you would like.

-Refrigerate for 45 minutes.

-Take out and chop up into smaller pieces.

-Serve & Enjoy!!

*Store in the refrigerator when not eating.
