Chocolate Zucchini Muffins with Almond Butter Swirl!


These muffins right out of the oven are SO good! This muffin is packed with zucchini, bananas, almond butter, oat milk, white whole wheat flour, applesauce, and more. For a muffin, it is very healthy and will keep you full! My kids enjoy these muffins for breakfast and I love that they are starting their day with veggies and protein. I enjoy them for a

mid-day snack with a cup of coffee. :-)

They are easy to put together and are so delicious!


Prep time: 10 minutes Bake time: 20 minutes

Ingredients:

-1 1/4 white whole wheat flour or whole wheat pastry flour

-1/4 cup unsweetened cocoa powder

-1/4 teaspoon salt

-1/2 teaspoon baking soda

-1/2 teaspoon baking powder

-1/3 cup pure maple syrup

-2 tablespoons raw honey

-1 tablespoon dark brown sugar

-2 tablespoons coconut oil (melted and cooled)

-1 teaspoon vanilla extract

-3 tablespoons unsweetened applesauce

-2 eggs

-1 shredded zucchini

-1/2 banana (ripe) and mashed

-1/2 cup oat milk (can also use almond milk)

-12 teaspoons almond butter

-1/2 cup mini dark chocolate chips

Next Step:

-Preheat oven to 350 F and add liners to your muffin pan.

-Shred Zucchini (I use a grater and shred the zucchini on a dish towel and sprinkle with a pinch of salt. Set aside for 5-10 minutes and then squeeze out all excess water. This is a very important step.

-In bowl combine and whisk all the dry ingredients, flour, cocoa powder, baking soda, baking powder, brown sugar, and salt.

-In another bowl use a hand or stand mixer and combine the coconut oil, maple syrup, vanilla, honey, banana, oat milk, and applesauce. Mix for 1 minute.

-Add in both eggs and mix for 30 seconds.

-Slowly add your flour mixture and mix for 1 minute until combined.

-Gently fold in the zucchini and chocolate chips. (leaving a few remaining to sprinkle on top)

-Add a tablespoon of batter into each muffin tin. (recipe makes 12 muffins)

-Add 1 teaspoon of almond butter on top of your batter .

-Then pour the remaining batter on top, filling almost to the top.

-Take a toothpick and gently swirl the batter moving around the almond butter inside.

-Sprinkle the remaining chocolate chips on top.

-Bake for 20 minutes or until toothpick inserted comes out clean.

-Let cool and ENJOY!!!
