Chocolate Zucchini Baked Oats!


Good morning! Start your day off right with a delicious chocolate zucchini oat bake! This healthy breakfast is packed with nutrients, antioxidants, fiber, protein, vitamin C, and potassium.


Ingredients:

-1/4 cup shredded zucchini

-1/2 banana (mashed)

-1 tablespoon nut butter (I used peanut butter)

-2 tablespoons oat milk

-1 tablespoon pure maple syrup

-1 teaspoon honey

-1 teaspoon dark brown sugar

-1 tablespoon salted butter (melted)

-1 egg

-1/2 cup quick rolled oats

-1 tablespoon cocoa powder

-1 teaspoon baking powder

-1 teaspoon ground flax seed

-1 tablespoon mini dark chocolate chips


Next Step:

-Preheat oven to 350F and take out a 6oz ramekin.

-Shred 1/4 cup of fresh zucchini and lay it out on a dish towel.

-In a small bowl mash up the banana with a fork.

-Add in the nut butter, oat milk, maple syrup, honey, sugar, butter, and egg. Whisk to combine.

-Squeeze out any excess water from the zucchini and stir the zucchini in to the wet ingredients.

-In another small bowl add in the oats, cocoa powder, baking powder, and flax seed. Stir to combine.

-Pour the dry ingredients into the wet ingredients and stir to combine.

-Add in the chocolate chips and stir.

-Pour the batter into the ramekin filling to the top.

-Bake for 25-27 minutes.

-Serve immediately.
