This chocolate espresso banana loaf is SO delicious!!! This easy to make loaf is flavorful, moist, and will have your guests going back for seconds! I love to have this for breakfast with a big cup of coffee, but it is also perfect for dessert or an afternoon snack.
Ingredients:
-3 ripe bananas (mashed)
-3 tablespoons plain greek yogurt
-3 tablespoons sour cream
-1/3 cup sugar
-1/3 cup dark brown sugar
-1 egg
-4 1/2 tablespoon salted butter (melted)
-1 teaspoon vanilla extract
-1 1/2 cups flour
-1/4 cup unsweetened cocoa powder
-1 tablespoon espresso powder
-1 tablespoon ground flax seed
-1/2 teaspoon salt
-2 tablespoons baking soda
-1 cup dark chocolate chips
-Powdered Sugar to garnish
Whipped Cream:
-1 cup of heavy whipping cream
-2 tablespoons of powdered sugar
-1/2 teaspoon vanilla extract

Next Step:
-Preheat oven to 350 F and line a 9x5 loaf pan with parchment paper.
-In a large bowl mash the bananas with a fork.
-Then add in the butter, sugar, and brown sugar.
-Using a hand or stand mixer, mix until combined.
-Then add in the egg, sour cream, yogurt, and vanilla. Mix and set aside.
-In another bowl add in the flour, cocoa powder, flax seed, baking soda, salt, and espresso powder. Whisk to combine.
-Add the dry ingredients into the wet ingredients and mix until blended.
-Fold in the chocolate chips.
-Add the batter to the loaf pan and sprinkle a few extra chocolate chips on top.
-Bake for 50-58 minutes. (you will know it is done when a fork inserted comes out clean)
-Take out and let cool for 15 minutes.
-To make the whipped cream, add the heavy cream, sugar, and vanilla into a large bowl and mix with a hand mixer on high for a few minutes until your whipped cream comes together.
-Sprinkle powdered sugar on top and serve with a dollop of whipped cream!
