This Chocolate Chip Skillet Cookie for 2 is incredible! Soft and chewy on the inside and crunchy on the outside. Top with vanilla ice cream and you have a quick and easy dessert for 2!
Prep time: 5 minutes Bake time: 24 minutes
Ingredients:
-1/2 cup Flour (unbleached all-purpose)
-1/4 tsp baking soda
-1/4 cup dark brown sugar
-1/4 cup granulated sugar
-1 tsp vanilla extract
-1/4 cup salted butter (melted)
-1 medium/large egg yolk
-1/2 cup dark chocolate chunk chips (the bigger the chips the better!)
-Top with your favorite ice cream (I prefer Vanilla or Vanilla Fudge)

Next Step:
-Preheat oven to 350 F and lightly butter your cast iron skillet.
-In a bowl combine the flour and baking soda. Set aside.
-In another bowl add in the granulated sugar, dark brown sugar, and vanilla extract. Whisk to combine.
-Then add in the melted butter. Whisk.
-Once combined add the egg yolk and whisk well.
-Next, add in the flour mixture and mix with a fork until combined.
-Add most of the chocolate chips (put a little on the side to melt and drizzle on top after)
-Transfer cookie dough to the skillet and bake for 23-24 minutes. (you will know when it is done when the middle is set and the edges are a light golden brown)
-While your cookie is baking melt the remaining chocolate chips in the microwave (I add a few drops of coconut oil)
-Once your cookie is done, let it sit for 10 min. Drizzle the melted chocolate on top and add a BIG scoop of ice cream on top.
