It's fall and time for lots of pumpkin recipes!! I absolutely love a slice of warm chocolate chip pumpkin bread on a cool fall day....with a big coffee on the side! This pumpkin bread is delicious, easy to make, and will have you going back for seconds. It doesn't last long in my house!
Ingredients:
-1 cup of organic pumpkin puree (not pumpkin pie)
-3/4 cup granulated sugar
-3/4 cup brown sugar
-1/2 cup salted melted butter
-2 eggs
-1 teaspoon vanilla extract
-1 3/4 cup of all purpose flour
-2 teaspoon pumpkin pie spice
-1 teaspoon baking soda
-1 1/4 teaspoon ground cinnamon
-1/2 teaspoon baking powder
-1/2 teaspoon salt
-1/2 cup dark chocolate chips
Next Step:
-Preheat oven to 350 and line a 9x5 loaf pan with parchment paper.
-In a large bowl add the melted butter, granulated sugar, and brown sugar.
-Using a hand or stand mixer, mix until combined.
-Add in the eggs and vanilla extract and mix.
-Mix in the pumpkin.
-In a small bowl add the flour, pumpkin pie spice, baking soda, cinnamon, baking powder, and salt. Stir to combine.
-Add the dry ingredients into the wet ingredients and mix for 1 minute.
-Stir in the chocolate chips.
-Pour the batter into the loaf pan and sprinkle a few extra chocolate chips on top.
-Bake for 50-60 minutes, or until a knife inserted in the middle of the loaf comes out clean.
-Let rest for 15 minutes.
-Serve and ENJOY!!!
