Chocolate Chip Mint Cookies!!

~The Perfect Cookie for St. Patrick's Day!~

OMG these chocolate chip mint cookies are AMAZING!! This is the perfect treat to surprise your family with for St. Patrick's Day. They are minty and oozing with dark chocolate chips. This is definitely high up on my list for favorite cookie! If you love mint chocolate chip ice cream, you will LOVE this cookie!


Prep time: 8 minutes Cook time 10-12 minutes (depending on size). Yields 15 cookies

Ingredients:

-1 stick of salted butter (softened)

-1/2 cup of granulated sugar

-1/4 cup dark brown sugar

-1 1/2 cups of all purpose flour (you can substitute GF flour)

-1 egg and 1 yolk

-1 teaspoon baking powder

-1/2 teaspoon baking soda

-1/4 teaspoon salt

-1/2 teaspoon cream of tartar

-1/2 teaspoon peppermint extract

-Green food coloring (I used gel, you can also use the drops). There is no exact measurement for this. Slowly add the food coloring until it reaches the shade of green you like!

-3/4 cup dark chocolate chips


Next Step:

-Preheat the oven to 350 F and line a large baking sheet with parchment paper.

-In a small bowl add the flour, salt, baking power, baking soda, and cream of tartar. Mix with a spoon and set aside.

-In a large bowl using a hand or stand mixer combine the butter and sugars.

-Then add in the egg and egg yolk and mix.

-Then add in the peppermint extract and the food coloring. Mix until combined and until you have the perfect shade of green!

-Add the flour mixture to the wet ingredients and mix until the dough forms.

-Pour in the chocolate chips and mix with a spoon.

-Form into balls and put on a baking sheet.

-Bake for 9 minutes and then take out and bang the baking sheet on the counter. That will flatten the cookies a little and also help ooze out the chocolate chips.

-Put back in the oven for a couple of minutes until the edges turn a light golden brown.

-Let cool on the baking sheet for 10 minutes.

-Serve and ENJOY!!!
