Chocolate Chip Crumb Banana Protein Bread!!!

OMG! This banana bread is amazing and perfect for breakfast with a large cup of coffee. It is also great to add to school lunches, or for an afternoon snack. This banana bread is soft in the middle, sprinkled with dark chocolate chips, and has a nice crisp crumble on top. The added protein, oatmeal, and bananas will keep you full throughout your morning.


Prep time: 5 minutes Cook time: 43-45 minutes

Ingredients:

-2 large ripe bananas

-1 1/2 teaspoon of dark brown sugar

-1/2 teaspoon of cinnamon

-3/4 teaspoon of vanilla extract

-1/4 cup salted butter softened

-1/2 cup of granulated sugar

-1 egg

-1/4 cup whey vanilla protein powder

-3/4 cup all purpose flour

-1/2 teaspoon of baking soda

-1 overflowing tablespoon of vanilla greek yogurt

-pinch of salt

-1/2 cup dark chocolate chips


Crumble Topping:

-3 tablespoons of flour

-3 tablespoons of dark brown sugar

-2 tablespoons of cold butter (cut into small pieces)

-1/2 teaspoons of cinnamon

-2 tablespoons of rolled oats

Next Step:

-Preheat oven to 350 F and add parchment paper to an 8.5 inch loaf pan.

-In a small bowl combine mashed bananas, brown sugar, cinnamon, and vanilla extract. Mix with a fork and set aside.

-In another bowl with a hand or stand mixer cream the sugar and butter together until combined and fluffy.

-Then add in the egg and mix.

-Next add in the flour, protein powder, baking soda, and salt. Continue to mix.

-Mix in the vanilla greek yogurt.

-Then fold in the chocolate chips.

-Pour banana/brown sugar mixture in and mix until combined, then pour into your loaf pan.

-To make the crumb mixture, combine the flour, dark brown sugar, butter, cinnamon, and rolled oats into a small bowl. Using your hands combine, press, mix, and squeeze until your crumble forms! (My kids love helping with this part!)

-Sprinkle all of the crumble on your loaf and add a few extra chocolate chips on top.

I also love to do a quick sprinkle of cinnamon sugar on top. (This is optional)

-Bake for 40-45 minutes until a fork inserted comes out clean.

-Let rest in your loaf pan until slightly cool.
