This delicious dessert is perfect to serve at any holiday or birthday party! Homemade chocolate cake and frosting is seriously the BEST!! I love this recipe because every guest will have their own little cake. This easy to make recipe will yield 12 mini cakes. Happy Holidays!!! xo
Ingredients:
-1/2 cup salted butter (melted)
-1 cup of oat milk (any milk will work)
-2 eggs
-1 1/2 teaspoon vanilla extract
-1 cup of boiling water
-1 3/4 cups all purpose flour
-3/4 cup unsweetened cocoa powder
-1 3/4 cup granulated sugar
-1 1/2 teaspoon baking soda
-1 1/2 teaspoon baking powder
~Sprinkles!!
Frosting:
-1/4 cup salted butter (melted)
-1/3 cup unsweetened cocoa powder
-1 1/2 cups powdered sugar
-3 tablespoons oat milk (any milk will work)
-1/2 teaspoon vanilla
Next Step:
-Preheat oven to 350 F and lightly butter a mini muffin pan.
-In a large bowl combine the flour and cocoa powder. Whisk to combine.
-Then add in the sugar, baking soda, and baking powder. Whisk.
-In a small microwave safe bowl melt the butter. Set aside to let cool for 3 minutes.
-Add the milk, eggs, and vanilla extract into the flour/cocoa powder mixture. Whisk to combine.
-Then add in the melted butter and continue to whisk.
-Lastly pour the boiling water in and whisk. (The batter will be very thin. Whisk until lumps are gone)
-Scoop 1/2 cup of batter into each mini muffin space in your pan. (This recipe should yield 12 mini chocolate cakes)
-Bake for 25 minutes.
-Take out and let cool completely.
-While the cakes are cooling, make the frosting.
-In a small bowl stir the melted butter and cocoa powder together.
-Add in 1/2 cup of powdered sugar and 1 tablespoon of oat milk. Mix with a hand mixer.
-Then add in another 1/2 cup of powdered sugar and 1 tablespoon of oat milk. Continue to mix.
-Repeat this step one more time. You will see the frosting come together.
-Lastly, mix in the vanilla extract.
-Once your mini cakes are cool, spread the frosting on top and sprinkle on your favorite holiday sprinkles!
-Serve and ENJOY!!!
