Chili Lime Chicken Tostada with Mashed Avocado!!
These chili lime chicken tostadas are bursting with flavor! I love the crunch of the baked corn tortilla combined with seasoned chicken, jalapeños, and avocado. This dish is easy to make ready within 15 minutes! Don't forget the hot sauce...it's a must! ENJOY!
Prep time: 10 minutes Cook time: 15 minutes
-1 lb thin sliced chicken breasts
-2 tablespoons fresh lime juice
-1 tablespoon apple cider vinegar
-1 teaspoon chili powder
-1/4 teaspoon paprika
-1 teaspoon garlic powder
-3/4 teaspoon onion powder
-1/2 teaspoon cayenne pepper
-1/2 teaspoon ground pepper
-1 teaspoon salt
-salt and pepper
-red pepper flakes
-1/2 teaspoon chili oil
-2 large jalapeños
-Preheat oven to 450 F
-*Lightly* spray the corn tortillas with avocado oil and place on a baking sheet. Heat 5 minutes and then turn them over and heat for another 5 minutes. Set aside.
-In a small bowl combine the lime juice, apple cider vinegar, chili powder, paprika, garlic powder, onion powder, cayenne pepper, ground pepper, and salt. Stir to combine. It will make a paste.
-Spread out all over the chicken on both sides.
-I like to cook this chicken on the grill but you can also make it on the stovetop. Cook a few minutes on each side until the chicken is cooked through.
-I also put the jalapeños on the grill and rotate them every few minutes. It will be done the same time as the chicken. (Leave the jalapeño whole and lightly spray with avocado oil. Put directly on the grill)
-Slice the chicken and jalapeño and set aside.
-Mash up the avocado and season with salt, pepper, red pepper flakes, and chili oil. Mix.
-Add a big scoop of avocado to your crispy tortilla and spread out.
-Layer the chicken and jalapeños on top.
-Garnish with cilantro, fresh lime, and hot sauce.
-Serve and ENJOY!!!
