Chicken & Pineapples!!


This recipe was a childhood favorite of mine. It is so nice for me to be able to make it for my children and see them enjoy it! This baked chicken is easy to make and is SO delicious!


Prep time: 15 minutes Cook time: 1 hour

Ingredients:

-4 to 5 split chicken breasts on the bone (skin on)

-1 green pepper (sliced)

-1 red pepper (sliced)

-1 onion (sliced)

-2 tablespoons olive oil

-2 cans of pineapple chunks in pineapple juice. (save the juice for the sauce)

-2 tablespoons brown sugar

-2 tablespoons white vinegar

-4 overflowing tablespoons of ketchup

-Juice from 1/2 lemon

-1/4 cup all purpose flour (you can substitute GF flour)

-salt and pepper


Next Step:

-Preheat oven to 350 F and set aside a large baking dish.

-Salt and pepper the chicken.

-Lightly coat the chicken in flour.

-Add the oil to a pan and sear both sides of the chicken to seal in the juices and to get a nice dark golden color. (Just a few minutes on each side)

-Take the chicken out and set in the baking dish.

-Start the sauce. On the stove top add 1 1/2 cups of the pineapple juice from the cans of pineapple chunks. Also, add in the brown sugar, white vinegar, and ketchup. Heat on medium and stir for 5 minutes.

-While your sauce is heating up, chop up the peppers and onions.

-Add them to the baking dish on and around the chicken.

-Pour the sauce all over the chicken and vegetables.

-Cover with aluminum foil and bake for 45 minutes.

-Take out and add the pineapples and juice from the lemon.

-Put back in the oven for 15 minutes. (uncovered)

-Serve over rice.
