This chicken dish is bursting with flavor! I love the combination of lemon, wine, and garlic. There is a nice drizzle at the end you can pour over your chicken, veggies, or rice. It is a great weeknight meal and can be made in 20 minutes! I love to serve this flavorful chicken with roasted tomatoes and asparagus.
Prep time: 15 minutes Cook time: 7-10 minutes
Ingredients:
-5 thin sliced chicken breast cutlets
-3 eggs
-1/2 cup dry white wine
-3 garlic cloves chopped
-1 garlic clove whole-peeled
-1/2 cup fresh squeezed lemon juice
-1 cup flour
-2 large tbsp of chopped parsley
-1/4 grated parmesan
-salt and pepper
-2 tbsp olive oil
-3 tbsp butter (salted)
Next Step:
-In a large flat bowl (I like to use a pie dish) add your eggs, 1/4 cup of white wine, 3 garlic cloves chopped, and 1/4 cup lemon juice. Mix.
-In another large flat bowl add your flour, parsley, parmesan cheese, and 1/4 teaspoon of pepper and 1/4 teaspoon of salt.
-One at a time take your chicken and dip in the flour mixture, then in the egg mixture, and then back to the flour mixture. Make sure to coat the chicken well and repeat for each chicken cutlet.
-On medium-high heat, add 1 tbsp of butter and 2 tbsp of olive oil to a pan. Once melted and bubbly add your chicken cutlets and pan sear until fully cooked and you have a nice deep golden color. (time will vary based on the thickness of your chicken)
-Remove cutlets and to the same pan add 1/4 cup of white wine, 1/4 cup lemon juice, 1 clove of garlic, and 2 tablespoons of butter. Let the wine cook down for 1-2 minutes on low heat and then drizzle all over your chicken.
