These homemade Chewy Peanut Butter Pretzel Granola Bars are the best!!
They are perfect for on go, for a school snack, before/after sports, or for a quick protein/fiber packed treat! They are so delicious and one of my kids favorite healthy snacks! You can easily make them gluten free by using gluten free oats and pretzels. I love making my own granola bars because they are so much healthier than store bought bars!
Ingredients:
-2 3/4 cups quick rolled oats
-1/4 cup creamed honey
-1/4 cup butter (melted)
-3 tablespoons dark brown sugar
-3/4 teaspoon vanilla extract
-1/4 cup peanut butter
-1/4 cup chopped pretzels
-3 tablespoons peanut butter chips
-1/4 cup mini dark chocolate chips
Next Step:
-Preheat the oven to 350 F and line a large baking sheet with parchment paper.
-Add the oats to the baking sheet and bake for 5 minutes.
-After 5 minutes stir and bake for 4-5 more minutes.
-While the oats are toasting, add the butter, honey, peanut butter, and brown sugar to a small pan on the stovetop.
-Heat on low and stir the mixture until the mixture is combined. (Make sure not to boil.)
-Remove the oat mixture from the oven and the butter/honey/peanut butter/brown sugar mixture from the stove top. Stir in the vanilla extract.
-Let both cool for 10 minutes.
-Pour the oats into a large bowl and then pour the peanut butter mixture in and stir to combine.
-Once cooled add in the chocolate chips, peanut butter chips, and pretzels. Stir to combine.
-Add the mixture to a 9x5 loaf pan (with parchment paper) and push down to form an even layer.
-Top off with a few extra pretzels.
-Refrigerate for 1 hour.
-Slice and serve.
