OMG! These homemade chewy granola bars are the best snack! They are perfect for on go, for a school snack, before/after sports, to serve at birthday parties, or for a quick fiber packed treat! They are so delicious and one of my kids favorite snacks!
Ingredients:
-2 1/2 cups of quick rolled oats
-1/3 cup honey
-1/4 cup salted butter
-1/4 cup dark brown sugar
-1/2 teaspoon vanilla extract
-1/2 cup dark chocolate M&M's
-1/4 cup mini dark chocolate chips
Next Step:
-Preheat the oven to 350 F and line a large baking sheet with parchment paper.
-Add the oats to your baking sheet.
-Bake for 5 minutes, stir, and then bake for another 5 minutes.
-While the oats are toasting, add the butter, honey, and brown sugar to a small pan on the stovetop.
-Heat on low and stir the mixture until the mixture is combined. (Make sure not to boil.)
-Remove the oat mixture from the oven and the butter/honey/brown sugar mixture from the stove top.
-Let both cool for 10 minutes.
-Pour the oats into a large bowl and then pour the butter mixture in and stir to combine.
-Once cooled add in the M&M's and chocolate chips. Stir to combine.
-Add the mixture to an 8x8 baking dish (with parchment paper) and push down to form an even layer. (Or if you want them thicker, you can add the mixture to a 9x5 loaf pan)
-Refrigerate for 1 hour.
-Slice and serve.
