Chewy Chocolate Chip Pecan Granola Bars!


OMG! These chewy delicious granola bars are the best snack! They are perfect for on go, for a school snack, before/after sports, or for a quick protein/fiber packed treat! They are so delicious and one of my kids favorite healthy snacks! I love making granola bars...this is the first of many I will share with you!


Ingredients:

-2 1/2 cups of quick rolled oats

-1/3 cup honey

-1/2 cup chopped pecans

-1/4 cup salted butter

-1/4 cup dark brown sugar

-3/4 teaspoon vanilla extract

-1/2 cup mini dark chocolate chips

Next Step:

-Preheat the oven to 350 F and line a large baking dish with parchment paper.

-In a large bowl add the oats and chopped pecans and mix to combine.

-Add the mixture to the baking dish and bake for 5 minutes.

-After 5 minutes stir and bake for 4-5 more minutes.

-While the oats and pecans are toasting, add the butter, honey, and brown sugar to a small pan on the stovetop.

-Heat on low and stir the mixture until the mixture is combined. (Make sure not to boil.)

-Remove the oat/pecan mixture from the oven and the butter/honey/brown sugar mixture from the stove top.

-Let both cool for 10 minutes.

-Pour the oats into a large bowl and then pour the butter mixture in and stir to combine.

-Once cooled add in the chocolate chips and stir to combine.

-Add the mixture to an 8x8 baking dish (with parchment paper) and push down to form an even layer.

-Refrigerate for 1 hour.

-Slice and serve.
