Cauliflower Quinoa Soup!


It's the time of year that I crave a big bowl of comforting soup! This Cauliflower Quinoa Soup can be ready and on the table in 25 minutes! It is healthy, gluten free, low calorie, and SO delicious! It is packed with nutrients, fiber, antioxidants, calcium, minerals, and protein. (Did you know that quinoa has 8 grams of plant based protein per cup?!? This soup is versatile... so feel free to add all of your favorite veggies in!)


Ingredients:

-1 head of cauliflower (cut up)

-4 large carrots (peeled and sliced)

-4 large garlic cloves (chopped)

-1 tablespoon salted butter

-8 cups of vegetable or chicken broth

-1 vegetable or chicken bouillon cube

-1 yellow onion (chopped)

-1/2 teaspoon ground black pepper

-1/2 teaspoon ground thyme

-1/2 teaspoon dried parsley

-1/2 teaspoon salt

-1/2 teaspoon red pepper flakes (optional)

-Cooked quinoa or you can substitute noodles

-Grated parmesan to sprinkle on top

Next Step:

-On the stovetop in a large soup pot add the butter. Once melted sauté the onions and garlic for 2 minutes on low heat.

-Add in the pepper, thyme, parsley, salt, and red pepper flakes. Stir to combine and sauté for 1 minute.

-Add in the carrots and broth. I prefer to use chicken broth but either is delicious!

-Turn up the heat to bring to a boil.

-Add in the bouillon cube and the cauliflower.

-Lower the heat, partially cover, and simmer for 10 minutes. (Or until the carrots and cauliflower is at your desired consistency.)

-After 10 minutes take out 2 heaping cups of cauliflower, carrots, and broth. Add to your blender until smooth and then pour back into the pot. Stir.

-Ladle the soup on top of a bowl of quinoa or noodles.

-Sprinkle grated parmesan on top.

-Serve and ENJOY!!!
