Cauliflower "Bread Sticks"


Do you love cheesy breadsticks and much as I do?!? If so, here is a healthier version made from cauliflower! These delicious cauliflower breadsticks will have going back for seconds and thirds! These "breadsticks" are packed with fiber, B vitamins, and antioxidants. They are also gluten free, keto friendly, and oh so good!!!


Ingredients:

-2 heads of cauliflower (riced)

-1/2 cup of fresh mozzarella (shredded)

-2/3 cup of fresh parmesan (grated)

-2 eggs

-3 large garlic cloves (chopped)

-1/4 teaspoon red pepper flakes

-1/4 teaspoon ground pepper

-1/4 teaspoon salt

-3 teaspoons dried oregano

-1/2 teaspoon fresh parsley (chopped)

-3/4 cup fresh mozzarella (shredded)

Next Step:

-Preheat oven to 375 F

-Chop up the cauliflower and add it to your blender. Set your blender to chop and it will rice the cauliflower. You might have to do this in 2 or 3 steps.

-Add the riced cauliflower to a large baking dish and bake for 20 minutes.

-To a large bowl add the eggs and scramble.

-Then add 1/2 cup of fresh mozzarella, 2/3 cup of fresh parmesan, the garlic, red pepper flakes, ground pepper, salt, oregano, and parsley. Whisk and set aside.

-Take out the cauliflower and lay on a dish towel. Let cool for 10-15 minutes.

-Then squeeze out all of the excess water. You will be amazed to see how much water comes out!

-Add the cauliflower to the egg/cheese mixture and stir.

-Add parchment paper to a 12x8 baking dish.

-Spread out the cauliflower mixture all over the baking dish and press down to form an even layer.

-Bake for 20 minutes.

-Take out and sprinkle 3/4 cup of fresh mozzarella all over. Turn the oven to 450 F.

-Bake for 5 more minutes.

-Remove from the baking dish and put directly on the oven rack for 5 minutes.

-Slice and serve immediately with a side of marinara sauce!
