Cashew Chicken!


If you are looking for a delicious meal that can be ready and on the table in 20 minutes, be sure to try this amazing Cashew Chicken! It is a family favorite and my kids always also me to make this. It is packed with flavor, protein, and a ton of yummy vegetables!


Ingredients:

-1 1/2 lbs chicken breast (cubed)

-1 tablespoon olive oil

-salt and pepper to taste

-1 tablespoon salted butter

-1 large green pepper (sliced)

-1 large red pepper (sliced)

-1 medium onion (sliced)

-1/2 zucchini (sliced)

-1 can water chestnuts (drained and chopped)

-Sugar snap peas or snow peas

-1 cup shredded carrots

-1/3 cup cashews

-1 teaspoon of sesame seeds

-Sriracha sauce to garnish

Sauce:

-4 tablespoons Tamari or soy sauce

-2 tablespoons of honey

-2 teaspoons chili paste

-2 teaspoons toasted sesame oil

-2 teaspoon of ginger (grated)

-1/2 teaspoon cornstarch


Next Step:

-On the stovetop heat up the olive oil and add the cubed chicken. Be sure to salt and pepper the chicken. Cook through and set aside.

-While the chicken is cooking add the tamari, honey, chili paste, sesame oil, and ginger in a small bowl. Whisk to combine. Then stir in the cornstarch.

-In the same pan that you cooked the chicken add the butter. On low-medium heat add in the peppers, sugar snap peas, and onions. Cook for a couple of minutes and then add in the water chestnuts, shredded carrots, and zucchini. Cook for a few more minutes.

-Then add your chicken back in and pour your sauce all over the chicken and vegetables.

-Stir to combine.

-Add the cashews and let simmer for a few minutes.

-Add the toasted sesame seeds on top and serve over rice.

-If you want a kick of spice add some sriracha sauce on top.
