Cashew Butter Chocolate Protein Pumpkin Muffins!


New favorite muffin!! OMG, these muffins right out of the oven are incredible. They are filled with pumpkin, cashew butter, protein powder, maple syrup and more! These muffins are great for breakfast, snack, or even dessert! I made these muffins for my daughter to take with her to a tournament, so she would have a quick snack with protein. Little did I know they would become everyone's favorite muffin! Can't wait for you to try them!


Prep time: 8 minutes Cook time: 20 minutes Yields: 15 muffins

Ingredients:

-1/2 cup butter (softened)

-3/4 cup granulated sugar

-1/4 cup pure maple syrup

-2 eggs

-1 tsp vanilla extract

-1 cup of pumpkin puree (*not pumpkin pie)

-1/4 cup cashew butter

-1 cup all purpose flour

-1/2 cup chocolate whey protein powder

-1/4 cup unsweetened cocoa powder

-1 tsp cinnamon

-1 tsp baking soda

-1 tsp baking powder

-1/2 tsp salt

-1 cup dark chocolate chips


Next Step:

-Preheat oven to 350F and add liners to your muffin pan.

-Using a hand or stand mixer cream the butter and sugar together until fluffy.

-Add in the maple syrup and mix.

-Add the eggs and continue to mix.

-Add in the vanilla and pumpkin puree and mix.

-Add in the cashew butter and mix.

-In a separate bowl combine all of the dry ingredients, flour, protein powder, cocoa powder, cinnamon, salt, baking powder, and baking soda.

-Slowly add the dry ingredients to the wet ingredients and mix.

-Fold in the chocolate chips and fill muffin tin almost to the top.

-Bake for 19-20 minutes (make sure to insert a toothpick/knife to make sure it comes out clean.

-Let rest for 5 minutes.
