These muffins are a great way to start your morning! They are fluffy, oozing with dark chocolate, and packed with protein! I love these muffins because there is only honey and one banana to sweeten them. That along with the cashew butter and protein powder keeps you full and energized throughout the morning. They are great for after school snacks and my kids love to grab one before a sports practice. This recipe yields around 15 muffins and they are gone before you know it!
Prep time: 5 minutes. Cook time: 16 minutes
Ingredients:
-1 1/2 cups white whole wheat flour (all purpose flour ok too)
-1/2 cup chocolate protein powder
-1/2 teaspoon baking powder
-2 teaspoons baking soda
-1/4 salt
-1 large ripe banana (mashed)
-1/2 cup cashew butter
-1/4 cup almond oil
-1/2 cup raw creamy honey
-2 eggs
-3/4 cup of oat milk
-1 cup dark chocolate chunk chips
Next Step:
-Preheat oven to 350 F and line your muffin tin with cupcake liners.
-In a large bowl, whisk together all of your dry ingredients. Flour, protein powder, baking powder, baking soda, and salt. Set aside.
-In another bowl, add your mashed banana, cashew butter, almond oil honey, and egg. Mix with a hand mixer on slow until combined. Then add in your milk and mix for 20 seconds.
-Add your wet ingredients into your flour mixture and on a low setting mix/blend under creamy and combined.
-Fold in your chocolate chips.
-Add batter to your muffin tin, filling a little more than 3/4 the way up. Add a few extra chocolate chips on top.
-Bake for 15-17 minutes, until a fork comes out clean.
-Let rest for 10 minutes.
