Caprese on Avocado "Bread"!!

~The best bread substitute!~

The real star of this dish is the avocado "bread"! I think it is the best and most flavorful bread substitute!! It is thin, crisp, and so flavorful! This healthy bread substitute of avocado, fresh parmesan, 1 egg, and everything but the bagel seasoning adds a fun twist to any sandwich you will make. Plus, your house will smell so good while making these!


Prep time: 5 minutes Cook time: 25 minutes

Ingredients:

-1 large ripe avocado

-1 cup grated parmesan

-1 egg

-1 teaspoon red pepper flakes

-2 teaspoons everything but the bagel seasoning (Trader Joe's)

-Fresh basil leaves

-Fresh mozzarella (sliced)

-Fresh tomatoes (sliced)

-Ground pepper

-Chili oil

Next Step:

-Preheat oven to 350 F and line a large baking dish with parchment paper.

-In a medium bowl mash the avocado.

-Then add in the egg and whisk until combined.

-Add in the parmesan, red pepper flakes, and everything but the bagel seasoning. Stir to combine.

-Add a heaping spoon of the avocado mixture onto the baking dish and spread out evenly to form a large circle. (Press down to make sure they are not too thick)

-Bake for 22 minutes and flip. Bake for another 8 minutes until they turn a nice golden brown color and crisp up.

-To make the caprese, add a layer of fresh mozzarella, then a slice of tomato, drizzle on little chili oil and ground pepper. Garnish with fresh basil.

-You can add any toppings to this avocado "bread"!
