I love this homemade caesar dressing! It is so delicious, easy to make, and healthy! I came up with this recipe a few years ago because I don't enjoy all of the mayonnaise, sour cream, and eggs that are often added to caesar dressing. I wanted to come up with a lower calorie and healthier version. This caesar dressing is amazing!
Ingredients:
-Romaine lettuce
-1/4 cup fresh parmesan
-1/4 cup fresh squeezed lemon juice
-1/3 cup extra virgin light olive oil
-3 garlic cloves
-1 1/2 teaspoon anchovy paste
-2 teaspoons dijon mustard
-1/2 teaspoon Worcestershire sauce
-1/2 teaspoon salt
-1/2 teaspoon ground pepper
-Fresh peeled slices of parmesan for garnish
-Seasoned croutons
Next Step:
-Add the parmesan, lemon juice, olive oil, garlic, anchovy paste, dijon mustard, Worcestershire sauce, pepper, and salt into your blender and pulse for 30 seconds.
-Pour into a glass container with a lid and refrigerate.
-Wash, dry. and chop your lettuce.
-Add the lettuce and croutons to a large bowl and drizzle the dressing on top. Toss.
-Add shaved parmesan on top.
-Serve and ENJOY!!!
*Store in the refrigerate for up to a week.
