This might be my favorite appetizer EVER!! These bite size buffalo chicken tostadas are perfect to serve at parties, holidays, and on game day! I will definitely be serving these to my friends and family when we watch the Super Bowl. This easy to make and delicious appetizer is packed with a ton of flavor and spice!
Ingredients:
-Flour tortillas
-Avocado spray
-Thin sliced chicken breast
-1 tablespoon butter (salted)
-1 1/2 teaspoon paprika
-1/2 teaspoon pepper
-1/4 teaspoon garlic powder
-1/4 teaspoon cayenne pepper
-1/8 teaspoon salt
-Romaine lettuce
-Tomatoes
-Avocado
Buffalo Sauce:
-1/2 cup Franks hot sauce
-3 tablespoons of salted butter
Next Step:
-Preheat the oven to 400 F and take out a muffin pan.
-Cut out 12 3x3 circles from the flour tortillas. (I use the bottom of my 1 cup measuring cup and press down on the flour tortilla.)
-Very lightly spray the front and back of the tortillas and place them on the bottom of the muffin pan. Push down gently so the sides come up a little.
-Bake for 8 minutes. Take out and set aside.
-While the tostadas are baking add the paprika, pepper, garlic powder, cayenne pepper, and salt to a small bowl. Sprinkle the seasoning all over the front and back of the chicken.
-Add a tablespoon of butter to the pan and heat up on med/high. Once the butter is melted add the chicken and cook on both sides until completely cooked through.
-To make the buffalo sauce heat up the butter on low heat on the stovetop and once melted stir in the hot sauce. Let simmer for 2 minutes and remove from the heat.
-Chop the chicken into small bitesize pieces and then add them back into the pan. Pour 3/4 of the buffalo sauce over the chicken and heat on low for 3 minutes.
-Next, chop up the lettuce, tomatoes, and avocado.
-Then take the tostada and add a layer of lettuce, a layer of buffalo chicken, followed by a sprinkle of chopped tomatoes and avocados.
-Drizzle some of the remaining buffalo sauce on top.
-Serve and ENJOY!!!!
