Buffalo Cauliflower Lettuce Wraps with Seasoned Almonds!!

I could eat these cauliflower lettuce wraps every night. They are flavorful, spicy, and healthy!
Prep: 15 minutes Cook: 20 minutes
-1 Large head of cauliflower
- extra light olive oil
-1/4 teaspoon garlic powder
-1/4 teaspoon pepper
-1/8 teaspoon salt
-1/2 cup Franks hot sauce
- 2 tablespoons butter
-Romaine Lettuce (washed/dried/and separated)
-1/2 Red onion- sliced
-1 Jalepeno pepper- sliced
-Blue cheese Dressing
-1/4 cup slivered almonds
-1 tablespoon of butter
- a sprinkle of pepper
- a sprinkle of paprika
- a sprinkle of cayenne pepper
-Set oven to 450 F
-Chop your cauliflower into bite size pieces and drizzle with olive oil, salt, pepper, and garlic powder. Put on a large baking sheet with parchment paper and bake for 16-20 minutes. (time depending on if you like your cauliflower more crispy vs. tender)
-While your cauliflower is cooking make your seasoned almonds. They are amazing and can be added to so many dishes! In a small pan on low-med heat melt 1 table spoon of butter and add your slivered almonds, pepper, paprika, and cayenne pepper. Stir constantly and lower heat. Cook and stir for a few minutes until the almonds turn a golden color. Set aside to cool.
-In another small pan melt 2 tablespoons of butter on low heat and add 1/2 cup of franks hot sauce. Stir for a few minutes until combined and set aside.
-With 5 minutes to go for your cauliflower, add the jalepeno's and onion's to your baking dish.
-Slice the avocado and prepare the lettuce cups.
-Take out your cauliflower when done and drizzle with 1/2 of the hot sauce and mix.
-Make your lettuce cups! Add the buffalo cauliflower, avocado, onions, jalepeno's, and top with the seasoned almonds. Drizzle extra buffalo sauce on top.
-Add blue cheese dressing if desired.
