If you like brownie sundaes, then you will love this twist on a traditional ice cream sandwich! I love a good brownie cookie and when stuffed with vanilla ice cream and chocolate chips it becomes SO delicious! I enjoy serving these yummy treats at birthday parties and backyard BBQ's.
Ingredients:
-2 cups dark chocolate chips
-1/2 cup salted butter
-1 cup granulated sugar
-1/4 cup dark brown sugar
-3 eggs
-3/4 cup all purpose flour
-1/4 cup unsweetened cocoa powder
-3/4 teaspoon vanilla extract
-1/2 teaspoon baking powder
-1/4 cup mini chocolate chips
-Vanilla Bean ice cream
-Mini dark chocolate chips
Next Step:
-Preheat oven to 350 F and line a baking sheet with parchment paper.
-In a glass bowl microwave the chocolate chips and butter together until melted. Stir every 25 seconds to make sure the chocolate doesn't burn. Set aside.
-In another large bowl add the granulated sugar, brown sugar, vanilla, and eggs. Using a hand or stand mixer, beat on high for 3 minutes.
-Then add in the melted butter and chocolate. Continue to mix until combined.
-Next, mix in the flour, baking powder, and cocoa powder. Mix until combined.
-Fold in the chocolate chips.
-Scoop out 1 1/2 tbsp of the batter and place on the baking sheet.
-Bake for 10 minutes.
-Take out and let cool completely.
-Add a big scoop of vanilla bean ice cream in the middle of two cookies and gently press down.
-Sprinkle mini dark chocolate chips around the ice cream.
-Freeze immediately.
-Once set, serve and ENJOY!!
