These muffins are the best! So light, fluffy, and bursting with blueberries! School is starting this week for my children, so these muffins are the perfect snack to add to their lunches. They love to help me make the streusel and sprinkle it all over the top.
I could snack on these mini muffins all day!
Prep time: 10 minutes Cook time: 11 minutes Yields: 12 mini muffins
Ingredients:
-1/2 cup fresh blueberries
-2 1/2 tablespoons of butter- melted and cooled
-1 egg
-1/4 cup of oat milk
-1/4 cup of greek vanilla bean yogurt
-1/4 cup of granulated sugar
-1 cup of flour
-1/2 teaspoon baking powder
-1/8 teaspoon salt
-1/4 teaspoon baking soda
Streusel Topping:
-1 tablespoon of melted butter
-1/4 cup of granulated sugar
-1/2 teaspoon of cinnamon
-1 tablespoon of flour
Next Step:
-Preheat oven to 400 F
-In a small bowl combine your butter, oat milk, and yogurt and whisk until combined.
-Then add in your egg and whisk.
-In a separate bowl, add your sugar, flour, baking powder, baking soda, and salt. Mix.
-Add your wet ingredients into your dry ingredients and mix with a spoon until a thick batter forms.
-Fold in your blueberries.
-Grease your mini muffin baking tin and fill almost to the top. Set aside.
-To make the streusel, in a bowl combine your sugar, flour, cinnamon, and melted butter. Then combine with your hand until a crumble forms.
-Sprinkle the crumble all over your muffins.
-Bake for 11 minutes or until a fork inserted comes out clean.
-Let sit for 10 minutes.
