Blueberry Swirl Muffins!

These blueberry swirl muffins are so delicious and bursting with blueberry flavor! The lemon sugar sprinkled on top is the perfect addition. The beautiful swirl is from a quick homemade blueberry jam that is so easy to make! I love serving these muffins for breakfast or brunch. They are also really delicious warm with vanilla bean ice cream on the side!


Ingredients:

-1 cup fresh blueberries

-5 tablespoons of butter- melted and cooled

-2 eggs

-1/2 cup of oat milk

-1/2 cup of greek vanilla bean yogurt

-1/2 cup of granulated sugar

-2 cups of flour

-1 teaspoon baking powder

-1/4 teaspoon salt

-1/2 teaspoon baking soda

-1/4 teaspoon vanilla extract

Blueberry Jam:

-1 cup fresh blueberries

-1 teaspoon granulated sugar

Lemon Sugar:

-1/3 cup white sugar

-1 1/2 teaspoon finely grated lemon zest (I used 2 lemons)

Next Step:

-On the stovetop on medium heat add the blueberries and sugar. As they heat up use a masher to burst the blueberries. Continue to stir and you will see the jam come together and thicken. Simmer on low for 5-8 minutes until it has thickened and reduced. Pour into a glass container to let cool.

-Preheat the oven to 375 F and line a muffin tray with liners. I like to use silicone liners.

-In a small bowl combine the butter and sugar and mix with a hand or stand mixer.

-Then add in the eggs and mix.

-Next add in the oat milk, yogurt, and vanilla and mix until combined.

-In a separate bowl add the flour, baking powder, baking soda, and salt. Whisk to combine.

-Add the dry ingredients into the wet ingredients and mix. Your batter will be thick.

-Fold in the blueberries.

-Fill each muffin to the top.

-Then take a teaspoon of the cooled blueberry jam and place it on top of each muffin.

-With a wood skewer or a toothpick blend the blueberry jam into the muffin. I like to do it in a figure eight pattern. Set aside.

-To make the lemon sugar topping, zest 2 lemons to make a teaspoon and a half of lemon zest. Add the lemon zest to 1/3 cup of sugar and mix with your hand to incorporate all of the zest.

-Sprinkle the lemon sugar over the muffins.

-Bake for 20 minutes or until a fork inserted comes out clean.

-Let sit for 10 minutes.
