Blueberry Lemon Loaf!


With the weather turning warmer, I had to make my favorite blueberry lemon loaf! OMG, this one is SO good. It is bursting with fresh blueberries and has a great lemon flavor! It is crisp and crumbly on the outside and so incredibly moist in the center. This loaf is great for breakfast, brunch, dessert, or even a mid day snack! When I make this loaf, it doesn't last long! My kids and family devour this one quick! I can't wait for you to try it. :):)


Prep time: 15 minutes Cook time:48-55 minutes

Ingredients:

-1/3 cup salted butter (melted)

-1/2 cup granulated sugar

-1/4 cup honey

-1/2 tablespoon grated lemon zest

-3 tablespoons fresh squeezed lemon juice

-2 eggs

-1 teaspoon vanilla extract

-2/3 cup non fat vanilla greek yogurt

-1 1/2 cup all purpose flour

-1 1/2 teaspoon baking powder

-1/2 teaspoon baking soda

-pinch of salt

-1 1/2 cups fresh blueberries


Crumble:

-1/4 cup salted butter (melted)

-2/3 cup all purpose flour

-4 1/2 tablespoons sugar

-1/2 teaspoon cinnamon

Next Step:

-Preheat oven to 400 F (move the oven tray to the lowest part in the oven.)

-Line an 8.5in loaf pan with parchment paper.

-In a medium size bowl combine the lemon zest and sugar. Mix to coat the sugar with the lemon zest.

-Add the melted butter and honey. Stir to combine.

-Whisk in the eggs and vanilla extract.

-Whisk in the yogurt and lemon juice.

-In a separate bowl add the flour, baking powder, baking soda, and salt. Stir to combine.

-Pour the dry ingredients into the wet ingredients and whisk to fully combine.

-Gently fold in the blueberries.

-Pour the batter into the loaf pan. Set aside.

-Make the crumble.

-In a microwave safe bowl melt the butter.

-Then add in the sugar and stir to combine.

-Add in the cinnamon and flour. Stir and then crumble with your hand for a few minutes.

-Sprinkle the crumble all over the blueberry batter.

-Bake for 48-55 minutes or until a toothpick inserted comes out clean.

~Take a look at your loaf around the 40 minute mark to make sure the top isn't browning too much. If so, you can add a pice of aluminum foil on top.~

-Let cool for 20 minutes.

-Slice, Serve, and ENJOY!!!
