Is there a better way to start your morning than with a healthy, delicious, blueberry breakfast oat bake!!?! I love this oat bake warm right out of the oven. It smells Amazing, and is packed with healthy oats, flaxseed, blueberries, cinnamon, oat milk, and more. Honestly it is so good, my daughter sometimes likes me to make it for dessert with a side of vanilla ice cream! lol I prefer it for breakfast, and love that it has a ton of flavor and keeps me full throughout the morning. It has a ton of fiber, protein, antioxidants, and vitamin C.
Prep time: 5 minutes Cook time: 25 minutes Serves: 1
Ingredients:
-1/2 cup quick rolled oats (can substitute GF oats)
-1/2 teaspoon ground cinnamon
-1/4 teaspoon baking powder
-1/2 teaspoon ground flaxseeds
-pinch of salt
-1 egg
-1/8 teaspoon vanilla extract
-1/4 cup oat milk
-1 tablespoon pure maple syrup
-1 tablespoon applesauce
-1/4 cup fresh blueberries
-sprinkle of cinnamon sugar
Next Step:
-Preheat oven to 350 F and gently grease a 6oz ramekin.
-In a small bowl combine the oats, cinnamon, baking powder, flaxseeds, and salt. Mix with a spoon.
-In another bowl combine the egg, vanilla, milk, maple syrup, and applesauce. Whisk until combined.
-Pour the wet ingredients into the oat mixture and stir until fully combined.
-Gently fold in the blueberries.
-Pour into the ramekin and lightly sprinkle with cinnamon sugar.
-Bake for 25 minutes.
-Serve and ENJOY!!!
