You will be going back for seconds when you try these blackened shrimp and avocado bites! They are easy and quick to make, have a ton of flavor, and a kick of spice! The avocado and shrimp together is a great balance of flavor and the baked corn tortilla gives the perfect crunch! This is one of my favorite appetizers to bring to a party!
Prep time: 8 minutes Cook time: 10 minutes
Ingredients:
-2 dozen fresh shrimp (cleaned and deveined)
-Avocado
-1 large tomato - chopped
-Corn tortillas (small rounds or cut into quarters)
-1 1/2- 2 tablespoons of butter
Blackened Seasoning:
-1 1/2 tablespoon of paprika
-1 teaspoon of cayenne powder
-1/2 teaspoon garlic powder
-1/2 teaspoon pepper
-1/2 teaspoon salt
-1/2 teaspoon onion powder
-1/4 teaspoon dried basil
-1/4 teaspoon dried oregano
-1/4 teaspoon dried thyme
Next Step:
-Preheat oven to 450 F
-With avocado oil- *lightly (just a mist)* spray your corn tortillas and put on a baking sheet.
-Bake in the oven for 5 minutes and then flip for another 4 1/2 minutes. When they are done and crispy, set aside.
-Combine all of your blackening season into a small bowl and mix to combine.
-Cut the tails off of your shrimp.
-Sprinkle the blackened seasoning all over your shrimp to coat.
-On the stovetop, melt your butter on medium heat and then add your shrimp. Cook until done. This will go quick, usually it is a couple minutes on each side.
-Put together your blackened shrimp and avocado bites!
-On your toasted corn chip add a layer of sliced avocado, then a shrimp, and then sprinkle with tomatoes.
-ENJOY!!
Note: If you use less shrimp you won't need all of the blackened seasoning and you can save it in an air tight container.
