Blackened Mahi Mahi Tacos!


This recipe was inspired from a recent trip to Aruba! The fresh fish combined with the blackened seasoning, pickled onions, and fresh tomatoes brings me right back to having a delicious lunch on the beach with a coconut cocktail in hand! These tacos are so flavorful, healthy, and delicious! Plus, they can be ready and on the table in 10 minutes!! YUM!


Ingredients:

-4 Mahi Mahi fillets

-1 tablespoon olive oil

-1 tablespoon of salted butter

-Lettuce (chopped)

-Tomatoes (chopped)

-Pickled red onions or raw onions

-Flour tortillas (or corn)

-Hot sauce

-Lime to garnish


Blackened Seasoning:

-1 1/2 tablespoons of paprika

-1 teaspoon of cayenne powder

-1/2 teaspoon garlic powder

-1/2 teaspoon pepper

-1/2 teaspoon salt

-1/2 teaspoon onion powder

-1/4 teaspoon dried basil

-1/4 teaspoon dried oregano

-1/4 teaspoon dried thyme


Next Step:

-Lay out your mahi mahi fillets and pat dry with paper towels.

-Combine all of your ingredients for the blackened seasoning into a small bowl and mix to combine.

-Sprinkle the blackened seasoning all over the mahi mahi and press into the fish.

-On the stovetop, melt your butter and olive oil in a sauce pan on medium high heat. Once hot add in the mahi mahi.

-Cook for a few minutes on one side until golden brown. Flip and the cook until opaque and cooked through.

-Lightly grill or heat up the flour tortillas.

-Then add in the blackened mahi mahi, chopped lettuce, chopped tomatoes, pickled onions, and top off with your favorite hot sauce!

-Serve and ENJOY!!
