Black Lentil & Pasta Soup


This is the best soup! It is filled with fresh vegetables, lentils, chickpea pasta and parmesan. I love it served with a side of warm garlic bread. This soup is always a big hit in my family and only takes 25 minutes to put together!


Prep time: 10 minutes. Cook time: 20 minutes

Ingredients:

-6 cups of organic chicken broth

-2 cups of water

-6 large carrots (sliced)

-4 ribs of celery (sliced)

-3/4 of a medium sized yellow onion (chopped)

-5 cloves of garlic (chopped very small)

-1 organic can of black lentils (drained and rinsed)

-3/4 cup of grated parmesan + 2 inch piece of the rind

-4 tablespoons of tomato paste

-1 tablespoon of olive oil

-1 chicken bouillon cube

-1/8 teaspoon salt and 1/4 teaspoon pepper

-1/4 teaspoon red pepper flakes

-1 box of Banza Chickpea Pasta Shells


Next Step:

-Slice the carrots and celery. Set aside.

-Chop the onion. Set aside.

-Chop the garlic. Set aside.

-In a large soup pan add 1 tablespoon of olive oil and heat on Medium. Once hot add the carrots and celery (sprinkle with salt and pepper) and let sauté for 5 minutes.

-After 5 minutes add the onions and garlic. Constantly stir for 2 minutes so your garlic doesn't burn.

-Add the tomato paste and stir. (Try and coat all of the carrots, celery, and onions.)

-Add the chicken broth and water. Stir. Heat to a boil.

-Once boiling turn heat to low to simmer. Add 1/2 cup of grated parmesan, the cheese rind, one bouillon cube, red pepper flakes, and a sprinkle of salt and pepper.

-Put a pot of water on to boil for your Banza Pasta. (Salt your pasta water and then cook pasta to al dente 8-9 minutes.) Set aside until your soup is done.

-Simmer your soup on low for 10 minutes and then add the black lentils.

-Continue to simmer your soup for another 5-10 minutes until the carrots and celery are at your desired tenderness.

-Taste your soup to see if you need additional salt and pepper.

-Plate your soup. Add the pasta, then the soup. Make sure to add 1-2 tablespoons of grated parmesan on top of each soup!
