These healthy Banana Pumpkin Protein Muffins are so delicious! I love having them for breakfast with a big cup of coffee, and my kids eat them at all hours of the day! haha
They are packed with protein, bananas, greek yogurt, pumpkin, honey and more! They are a great source of Vitamin C, potassium, nutrients, probiotics, calcium, and will keep you full throughout your morning. Have a great day!
Ingredients:
-1 1/4 cup flour
-1/2 cup chocolate protein powder
-1 teaspoon ground cinnamon
-1 teaspoon pumpkin spice
-1 teaspoon baking powder
-1 teaspoon baking soda
-1/4 teaspoon salt
-2 ripe bananas (mashed)
-1/2 cup vanilla non fat greek yogurt
-1/4 cup salted butter (melted)
-1/4 cup pure maple syrup
-2 tablespoons honey
-1 teaspoon vanilla extract
-1 egg
-1 cup canned pumpkin (not pumpkin pie)
-3/4 cup dark chocolate chips
Next Step:
-Preheat oven to 425 F and line a muffin tray with liners.
-In a small bowl add the flour, protein powder, cinnamon, pumpkin spice, baking powder, baking soda, and salt. Whisk to combine.
-In a large mixing bowl using a hand or stand mixer, add the mashed bananas, maple syrup, honey, and butter. Mix until blended.
-Then add in the egg, yogurt, and vanilla. Mix until blended.
-Next add the pumpkin and mix.
-Slowly add the flour mixture into the wet ingredients and mix until fully combined.
-Fold in the chocolate chips.
-Fill each muffin pan almost to the top.
-Bake at 425 F for 5 minutes and then lower the temperature to 350 F for another 15-20 minutes until a toothpick inserted comes out clean.
-Let cool for 15 minutes.
-Serve and ENJOY!!
