These healthy banana oatmeal breakfast bars are the perfect way to start your day! They are so delicious and will keep you full throughout your morning. You can also serve these at brunch and they are great to pack in school lunches!
Prep time: 8 minutes Cook time: 25-30 minutes
Ingredients:
-2 cups of quick rolled oats
-1/2 cup all purpose flour
-1 teaspoon ground cinnamon
-1 teaspoon baking powder
-3 large ripe bananas
-3 tablespoon salted butter (melted)
-1/4 cup pure maple syrup
-2 tablespoons dark brown sugar
-1 large egg
-1 teaspoon vanilla extract
-1/2 cup chocolate chips
Next Step:
-Line an 8x8 baking dish with parchment paper and preheat the oven to 350 F.
-In a small bowl combine the flour, cinnamon, and baking powder. Set aside.
-In a large bowl mash the bananas with a fork.
-Then add in the butter, syrup, and brown sugar. Whisk to combine.
-Then add in the egg and vanilla and whisk.
-Add the flour mixture into the banana mixture and whisk.
-Then add in the chocolate chips and stir.
-Lastly, add in the rolled oats and stir to combine.
-Pour the oat mixture into your baking dish and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
-Let your breakfast bars rest for 10 minutes.
