Baked Chicken Bruschetta!
If you want a delicious baked chicken dish that your whole family will enjoy, try this amazing chicken bruschetta! The combination of fresh tomatoes, garlic, basil, balsamic vinegar, fresh grated mozzarella, parmesan and seasoning on chicken is perfect! The chicken comes out so tender and flavorful. As a bonus, it is SO easy to make. You will definitely be going back for seconds. :-) You can pair this with pasta, potatoes, rice, or a big salad.
Prep: 8 minutes Cook: 25 minutes
- 4-6 thin sliced chicken breasts
-2 tablespoons balsamic vinegar
-2 tablespoons olive oil
-1 1/2 garlic cloves (chopped)
-1 teaspoon Italian seasoning
-1/4 teaspoon salt
-pinch of ground pepper
-pinch of garlic powder
-1/2 cup of shredded mozzarella (may need more)
-7 roma tomatoes (chopped)
-1/2 red onion (chopped)
-3 cloves of garlic (chopped)
-1/4 cup fresh basil (chopped into ribbons)
-1 teaspoon balsamic vinegar
-1 teaspoon olive oil
-1/4 teaspoon salt
-pinch of pepper
-3 tablespoons fresh grated parmesan
-Preheat oven to 425 F
-In a small bowl combine the ingredients for the chicken marinade. Olive oil, balsamic vinegar, chopped garlic, Italian seasoning, salt, pepper, and garlic power. Stir to combine.
-Add the chicken breasts to a 9x13 baking dish and pour the balsamic marinade all over the chicken. (Flip the chicken to make sure you get both sides)
-Bake in the oven for 20-25 minutes until your chicken is cooked through.
-While the chicken is cooking, prepare the bruschetta.
-In a small bowl add the chopped tomatoes, onion, garlic, basil, balsamic vinegar, olive oil, salt, and pepper. Stir to combine.
-Then add in the grated parmesan and stir.
-When the chicken in done, take out and sprinkle the fresh mozzarella all over the chicken and then add all of the bruschetta mixture on top.
-Put back in the oven for 5 minutes.
-Serve and ENJOY!!!
